Charles Ranhofer (1836-1899) arbeitete über 30 Jahre als Chefkoch im berühmten Restaurant "Delmonico´s in New York City. Während dieser Zeit sorgte er für das kulinarische Wohl von berühmten Persönlichkeiten der damaligen Zeit (u.a. US-Präsident U.S. Grant, US-Präsident Johnson, Charles Dickens, Jenny Lind). Einigen seiner prominenten Gäste widmete er auch Speisen. In seinem Kochbuch "The Epicurean" findet man auf über 1000 Seiten nicht nur zahlreiche Rezepte sondern auch viele historische Menüs aus dem Restaurant (z.B. Besuch von US-Präsident Johnson am 29. August 1866).
